Cắt nhỏ bơ, cho vào thố sâu lòng, đặt ở nhiệt độ phòng cho bơ mềm. Nhặt sạch hành lá, rửa sạch rồi giũ ráo nước, thái nhỏ thành lá.
Đánh tan bơ mềm bằng spatula, thêm 15g đường bột và 1g muối vào đảo đều. Sau đó dùng máy đánh trứng đánh cho đến khi gia vị tan, hỗn hợp bơ đường nhạt màu.
Sau đó thêm 10g lòng đỏ trứng gà vào, dùng spatula áp dụng kỹ thuật fold để trộn đều hỗn hợp. Không cần trộn quá lâu. Cho tiếp hành lá, các loại bột mì, bột hạnh nhân và bột phô mai đã chuẩn bị vào thố bơ, tiếp tục trộn cho hỗn hợp bánh quy bơ được đồng nhất và ráo.
Cho hỗn hợp làm bánh quy bơ vào túi bóp kem, bóp thành những bông hoa nhỏ lên khay nướng. Đem nướng bánh quy bơ trong lò ở 160 độ C trong khoảng 20-25 phút là bánh quy chín.
Cho bánh quy bơ hành lá ra khỏi lò, đợi bánh nguội bớt là có thể dùng. Bánh quy bơ dùng không hết có thể cho vào hộp hoặc hũ có nắp đậy kín, đặt nơi thoáng mát dùng dần trong thời gian dài.
