Thịt bò khô tẩm sả ớt với thịt bò thăn cắt lát mỏng dai ngon, cùng vị cay cay của sả ớt, thêm gia vị nêm ngòn ngọt đảm bảo ai ăn cùng phải ghiền. Đây là món ăn nhậu tuyệt vời cho ông xã nhà bạn.
Thịt bò rửa sạch lau khô. Thái thịt hơi mỏng, dọc thớ, to bản. Sả thái nhỏ, giã nhuyễn, trộn chung với 1/2 ớt khô trong một bát. Đường, nước tương, coca, muối, hạt nêm, dầu hào, ớt sa tế, vừng và ngũ vị hương cho vào âu hòa tan. Sau đó cho thịt vào trộn đều. Lấy màng thực phẩm bọc kín miệng âu để trong ngăn mát tủ lạnh 1 đêm.
Qua 1 đêm bạn xếp thịt ra khay và phơi nơi có nắng. Phơi cho thịt se lại. Nếu không có nắng bạn có thể cho vào lò sấy qua (cũng có thể cho lên chảo sấy ở lửa nhỏ).
Bắt chảo dầu lên bếp. Dầu nóng cho từng miếng thịt vào chiên với lửa vừa. Khi thấy thịt chuyển qua màu đỏ sậm thì vớt thịt ra dĩa có lót giấy thấm dầu. Bắc một cái chảo khác lên bếp, cho 1 muỗng canh dầu điều cùng sả và ớt (ở bước 1) vào xào 1 phút cho thơm. Sau đó cho thịt bò vào xóc đều 1-2 phút là hoàn tất.
